Specification

A commis chef is the most common starting position in many kitchens and in principal the most junior culinary role. A commis chef prepares food and carries out basic cooking tasks under the supervision of a more senior chef. The primary objective of the commis chef is to learn and understand how to carry out the basic functions in every section of the kitchen. Therefore having the opportunity to experience, consider and value each section with a view to choosing an area where they feel most inspired. The learning journey of any chef will vary considerably from one individual to the next; however it is necessary to understand and have experience in the basics that this role

Entry Requirements

There are no formal entry requirements for this qualification. However applicants are expected to have a good understanding of maths and a clear command of English and to have achieved or work towards formal Key Skills qualifications at level 2.

Method of Assessment

Under the new 2017 Governments Department of Business requirements, All apprenticeship standards must include independent end assessment to check the apprentice’s overall performance against the standard. Independent end assessment occurs when the employer is satisfied that the apprentice is working consistently at or above the level set out in the commis chef apprenticeship standard. The assessment period for the commis chef standard can commence at any point once the apprentice is competent after the twelve-month minimum period of learning and development.

assessment will consist of: On-demand testing of knowledge and understanding: Practical Observation of food preparation as detailed in the standard. Formal assessment of a menu log and professional discussion to allow explanation of this.

Progression Routes

Successful completion of this qualification can lead on to learners undertaking study at a higher level to obtain promotion to future senior chef roles
